TeaBreath began with a simple question:

Green tea, Oolong, and black tea all begin with the same plant: Camellia sinensis. How its leaves are cultivated, harvested, and processed can influence their chemistry.
We wanted to look beyond the cup — and deeper into the leaf.

Tea is more than a beverage. Inside the tea leaf is a complex mix of naturally occurring compounds, including polyphenols, catechins, flavonoids, and amino acids.
Tea polyphenols are a broad family of compounds found naturally in tea, including well-known catechins such as EGCG, ECG, EGC, and EC. Their composition can vary with the tea variety and how the leaves are processed.
Understanding these compounds has become an important part of tea science.
